Our culture has a completely skewed sense of what a &#039;healthy&#039; diet consists of. Every nutritionist tells us to eat a low calorie, low fat diet to be healthy, yet 95% of those diets fail, and heart disease, obesity, and cancer are at their highest rates ever. 

Please chefs, stick to the traditional recipes and the traditional fats like lard and tallow that humans have been eating just fine for thousands of years, and stay away from the bad tasting, new fats like canola and vegetable oil, that no human would ever be able to eat without an industrial processing plant to make them.

And Chris can you publish an offal cookbook already?</description>
