Battle Offal with you and Mario would be great to see. One can only dream. BTW: I made Trippa alla Romana, based on Marios recipe, last week and it came out fantastic. I used roma tomatoes from the last good harvest out of my garden and some nice honeycomb tripe from the local Mexican grocery. Two weeks ago I cooked and ate my first sweetbreads. Very nice, I'm hooked.............it was, well, Offal Good. Whoa. Battle Offal with you and Mario would be great to see. One can only dream.
