Outside Magazine Video

In the November issue of Outside magazine there is a story based on nutrition and recovery for athletes. I was asked to give a few recipes and there is a video to boot. Take a look its a solid recipe for Cornish Game hen Fra diavolo with dandelion greens and fennel super simple and nutritional.

Gourmet magazine loves pigs head

I was shocked when Gourmet Magazine asked me to butcher a pigs head for the video section of there website. This is a major push for offal exposure to the mass public, I give them huge credit for going outside the box.

This is a black and white short documentary about the slaughter houses of Paris in 1949 by George Franju, the title translates to “The Blood of the Beasts” .

This video was given to me a few weeks ago and I wanted to show it here on the site.

This is a graphic film and to some it may be offensive.

Pork week on Salon.com

Pork week on salon.com was a whole week of glorifying the pig in all its splendor. Giving this magical animal its rightful due from bacon to all its lost cuts. They interviewed a few chefs and producers on their thoughts and beliefs on pork usage and production as well as there addiction to the meat of this delicious animal. I feel very fortunate to have been interviewed for “A Magical Wonderful Animal” since pork is my favorite in so many ways.

A few weeks back the folks from Current TV filmed at a salumi society pick up and at our production plant in Oakland. Thanks to all the salumi society members that took time out of there day to be interviewed as well as bud who gave a great tour of the plant. The video has been on eatersf and serious eats and its going to shown on virgin airlines in flight from June 15th threw July 15th.

Just this past week Michael Symon the newly crowned iron chef came to town. We had the opportunity to do battle again and get a bite to eat and catch up. He is a great friend and great chef who always keeps me laughing, as you can see in the video. It was great to cook with him again, as well as get a chance to cook for him and his wife Liz. I hope I didn’t stuff them to bad, bacon wrapped pigs head, chilli and bones, cod milt bruschetta just to name a few. To keep up on Michael’s goings on check out his new blog.
