I love your exasperated voice --it comes across beautifully :-) If you ever have time, can you describe a way to extract lamb and/or pig brains so that you get either one nice neat piece of brain or two neat lobes? I work as an apprentice farm butcher, and so far the way my teacher slaughters lambs and pigs, the brains get scrambled (and not in a nice way). I reckon you generally get your brains already extracted, but maybe you've learned how somewhere along the way. Cheers! Fantastic!
