Thank you for your point of view about offal. It is a real inspiration to me. I am a teenage girl and aspiring chef, I discovered this website by mistake, and I love it! Thanks so much for all you do by opening peoples&#039; eyes. Now I&#039;m interested in a much wider range of cooking &amp; eating - and I&#039;m looking at meat in a whole new way. 		<description>After finishing the grading of some 60 upper division papers a few days ago, it is a treat to read Lisa&#039;s paper. And its innards, of the paper, are perfectly served as well. A recommendation to read something about the history of our contemporary avoidance of &#039;unpleasant&#039; views, I recommend to read Norbert Elias &quot;The Civilizing Process&quot; in which he gives a vivid picture (and some theories) of the modern world turning away from all things natural. Not bad either is Ann Vileisis in her &#039;Kitchen Literacy.&#039; Island Press. Thanks Chris for sharing this paper.</description>

		<description>That explains why the chicken mcnuggets tasted so much better before they made them out of white meat only.  They are so bland now.  I&#039;m glad my childhood was spent during the golden era of the real nugget.
Today&#039;s children will sadly never know that satisfying rich umami flavor of chicken offal.  Something must be done!</description>
